Here are some of my favorite recipe creations. As I’ve learned, recipes are by no means set in stone. Use them as a starting point and add your own creative culinary touch! Spinach salad with maple mustard dressing
Moroccan bean, squash, and swiss chard soup
Indian lentil, bean, sweet potato, and coconut soup

Chicken tagine with honeyed tomatoes
Foil baked salmon with tomato garlic salsa
Chicken, green bean, and mushroom almond butter curry
Tilapia cakes with spiced tomato sauce
Jalapeno and chili marinaded tilapia tacos with pureed tomato salsa
Pasta and Pizza
White bean, vegetable, and tofu baked orzo
Avocado topped salmon, vegetable, and noodle stir-fry
Butternut squash gnudi with pumpkin/apple/brown butter sauce
Crispy tofu and rice noodle bowls
Side Dish
Roasted corn, black bean, and mango salad (also makes a delicious vegetarian main with chicken, fish, tofu, or cheese added to it)
Roasted vegetable orzo salad (again, dump in a can of chickpeas or some meat/fish/poultry and you’ve got a meal)
Israeli couscous with squash and peppers
Grilled eggplant with tahina and tomato lemon salsa
Roasted butternut squash with sage, caramelized onions, and goat cheese
Sweet potato cakes with yogurt topping
Butternut squash gnudi with brown butter and pumpkin sauce
Israeli couscous with dried fruit and coconut milk
